Zuchini Bread

Zucchini Bread
 
3 eggs                                                            3 tsp. cinnamon
1 cup salad oil                                                1 tsp. vanilla
1 cup light brown sugar                                    1 tsp. salt
1 cup sugar                                                    1 tsp. baking soda
2 cups raw Zucchini (graded fine)                      1 tsp. baking powder
2 1/2 cups flour                                               1 cup (chopped fine) walnuts, (optional)
1/2 cup wheat germ
 
Beat eggs until light and fluffy.  Add sugar, oil, zucchini and vanilla.  Mix well.  Add dry ingredients; mix, stir in nuts.  Pour into 2 large or 3 small (greased & floured) loaf pans.  Bake 1 hour at 325 degrees or until test straw comes out clean.
 
 
This is my favorite recipe.  Don't know where it came from, but I have used it for years.   Good luck.  Hope you have a good supply of zucchini  or live near Judy.
