Rolls, Cinnamon

With a whisk, combine:
  • 4 egg yolks - Room Temperature
  • 1 whole egg - Room Temperature
  • 2 oz sugar (1/4 cup)
  • 3 oz butter, unsalted - melted
  • 6 oz buttermilk - Room Temp
Add the dry ingredients
  • 2 Cups All Puropse Flour  (out of 20 oz or 2 1/2 cups, leave half a cup) 
  • 2 1/4 tsp Instant Rise yeast (which is slower than rapid rize) or one package
  • 1 1/4 tsp kosher salt
When you have a batter, change to a hook (or knead) and
  • Add rest of flour, saveing 3/4 a cup. Knead a couple min.
  • Add 1/4 cup at a time until dough forms  - about 5 min
  • knead by hand for 30 sec and shape.
  • Put in glass and let it sit 2 - 2 1/2 
For the center filling, stir together
  • 1 Tbsp Cinnamon
  • 8 oz light brown sugar
  • pinch of kosher salt
Total Ingredients:
  • 5 Eggs
  • 2 oz sugar
  • 3 oz butter
  • 6 oz buttermilk
  • 20 oz flour
  • 2 1/4 tsp Instant Rise Yeast
  • 1 1/4 kosher salt
  • 1 Tbsp Cinnamon
  • 8 oz light brown sugar
  • pinch kosher salt
  • 3/4 oz of butter
  • 2 1/2  oz creem cheese
  • 3 Tbsp whole milk
  • 5 1/2 oz powdered sugar (sifted)
