Olive Cheese Balls

                 Cheddar-Cheese and Olive Appetizer

   1      Cup           Cheddar cheese -- shredded
     1/4  Cup           Butter or margarine -- softened
     1/8  teaspoon      cayenne pepper
     3/4  Cup           flour
  36                    olives, green -- small to medium
 
Combine cheese, butter, cayenne and flour, mix with hands to smooth dough.  Shape in 1-1/2-inch-thick log.  With sharp knife cut crosswise in 36 thin slices.  Place 1 olive in center of each slice and bring up edges of dough to cover olive completely.  Roll gently between hands to smooth edges.  Put on ungreased cookie sheet and chill 10 minutes.  Bake in preheated 375 degree oven about 20 minutes or until golden brown. (Or freeze, then bake unthawed about 30 minutes.) Remove to rack to cool.  Store airtight in refrigerator about 10 days.  Let come to room temperature before serving or reheat in 350 degree oven about 5 minutes.  Makes 3 dozen.
