Ice Cream

Ice cream (Philly style - no eggs)

3 cups of equal parts whipping cream and whole milk. Combine over med heat to 175 degrees. Scrape and add 1 vanilla bean and 1 Cup preserves. Remove from heat and refrige overnight

Alt:
2 parts half and half. 1 part whipping cream.
2 cups half, 1 cup whipping cream 

1 cup sugar minus 3 tbs preserves

whole milk is around 4% fat
whipping cream is 30%

(30 + 4 ) /2 = 17%
