Multi Monitor

Ubunti chooses to go with the zero config option for video. This works as long as you don't do anything more exotic than a single card dual-head setup.

ATI

Have the xorg utility spit you out a config file and add the lines at the top I highlighted in red

Section "ServerLayout"
        Identifier     "X.org Configured"
        Screen      0  "Screen0" 0 0
        Screen      1  "Screen1" RightOf "Screen0"
        InputDevice    "Mouse0" "CorePointer"
        InputDevice    "Keyboard0" "CoreKeyboard"
        Option "Xinerama"

You also need to set your virtual display size, as turning this on break the zero config options. Look up your monitor's max resolution and set the virtual resolution to match. This is down toward the bottom

       SubSection "Display"
                Viewport   0 0
                Depth     24
                Virtual   1400 1050
